**Your main focus will be**:
- Operate and manage analytical equipment, ensuring the collection, analysis, and reporting of data.

**Key responsibilities**:
- Measure sample carbohydrate composition (lactose, glucose, maltose, fibers, etc.) of food samples via High-Performance Liquid Chromatography (HPLC).
- Prepare buffers, analytes, and samples for comprehensive analysis.
- Measure protein content and composition via Kjeldahl, and various spectrophotometric assays.
- Measure viscosity and texture of food samples via rotational viscometer or rheometer.
- Ensure the integrity of analytical data through review and validation processes.
- Keep detailed and systematic records of experiments and procedures.
- Maintain laboratory instruments and troubleshoot any issues with instruments or methods.
- Calibrate instruments (HPLC, viscometers, etc.) regularly to maintain accuracy.
- Manage procurement and record keeping of chemicals, and consumables

**Job Requirements**:

- Diploma as a laboratory technician or bachelor’s degree in Chemistry, Food Science or related field.
- Experience in managing laboratory tasks (instrument maintenance, calibration, working with chemicals, etc.). Preferably experience with HPLCs.
- Strong analytical skills and attention to detail.
- Experience working with enzymes is a plus.
- Excellent written and verbal communication skills (Portuguese, and English). (intermediate English proeficiency is mandatory)
- Collaborative spirit with a willingness to join a global team.
