Position Overview
The F&B Controller will oversee the management of financial operations related to food and beverage services. Key responsibilities include:
  • Supervising the Receiving Clerk and managing food and beverage requisitions.
  • Preparing detailed sales analyses and standard recipe costing.
  • Generating comprehensive cost reports and monitoring non-food purchases against established budgets.
  • Conducting pre-costing for all restaurant and banquet menus.
  • Managing inventory levels of food, beverage, and general supplies, ensuring optimal par levels are maintained.

Additionally, the role involves:
  • Planning and preparing schedules for expense accounts as needed.
  • Assisting the Director of Finance with various reporting tasks.
  • Addressing any issues that may impact the hotel's interests promptly.
  • Identifying cost-effective resource utilization and educating the team accordingly.
  • Conducting regular inventories of food and beverage items.

Operational Responsibilities
The F&B Controller will also supervise all cost control functions, which include:
  • Reviewing KOTs/BOTs and conducting spot checks.
  • Finalizing all cost-related accounts for food and beverages.
  • Comparing monthly food and beverage purchases with accounts payable.
  • Submitting all relevant cost details to the Accounts Department.
  • Conducting monthly inventories of food, beverage, and storeroom items.
